Creamy Southwestern Soup


Another Pinterest find!  Super Easy Super Yummy Crockpot Soup.  This was really good, after reading some of the comments I added skim milk to make it more soup like and did not add the cream cheese or the milk until about an hour or so before I served.  I love soups like this my kids love them and it’s a super easy dinner I usually serve with grilled cheese and call it a day.  Everyone is happy 🙂

1 can of rotel diced tomatoes with green chilies
1 can of corn 15oz, I only had a 12oz bag of frozen corn but just dumped it in and it still turned out great
1 can of black beans 15oz (drained & rinsed)
2 frozen chicken breasts
1 packet dry ranch dressing seasoning
1 tablespoon cumin
1 teaspoon onion powder, I didn’t have this either so I used minced onion
1 teaspoon chili powder
4 cups of milk I used fat free
8oz of cream cheese

Put every thing but the last two ingredients in your crock pot.  I was hesitant to put frozen chicken in mine but I Go0gled and learned that it’s fine as long as your crockpot doesn’t specifically say not too.  So I did it, and we’re fine 😉

Set crockpot on low and cook 6-8hrs, I think my crockpot gets hotter then some so mine didn’t even need the whole 6 on low.  Then about an hour (maybe more depending on your crockpot, like I said mine seems to cook things pretty quickly) before you serve shred the chicken, all I had to do was stick some forks in it and it basically fell apart.  Add the milk and cream cheese finish cooking.

2 other great things about this recipe, it made a ton so I froze the left overs for another even easier dinner and if you want to make this vegetarian leave out the chicken add more black beans, pinto or kidney beans would be great too!!
